Detailed Description: 8 Brix Verjus is a sweet and sour, wine-friendly alternative to vinegar, citrus or acidic ingredients. Premium wine grapes selected and hand-picked at 5 ripening intervals, from icewine to unripe, are pressed and blended, then sterile filtered with no preservatives or coloring.

Uses: Use this sweet and sour twist on verjus to enhance sweet or savory foods by adding a few drops to sauces or finished meats, fish and shellfish, vegetables, in pastry, quiches, soups, stews and marinades.

All Natural: All natural from Minus 8 Vineyards pressed premium grapes. No added coloring, no preservatives.

Availability: Red and White 8 Brix Verjus are available. 8 Brix Verjus is made once a year, if the growing and weather conditions permit.

Different: 8 Brix Verjus is made with juice from naturally frozen grapes (very sweet) and with juice from unripe grapes (very sour), as well as ripe grapes. 8 Brix is sweet and sour. Traditional verjus is sour.
