Wall Street Journal verjus article and recipe

Detailed Description: 8 Brix is made from the juice of premium vinifera (wine) grapes literally chosen bunch by bunch, hand-picked and pressed in small volumes at five intervals between August and January. Unripe and green in August through ice wine ready in January.   Each ripening stage introduces a distinct flavour profile that blends seamlessly into the next. Sweet and sour pure juice. Sterile filtered with no preservatives or colouring.
Pierre Schaedelin, (then) chef at New York's Le Cirque 2000, reduces the white verjus with shallots and cream and serves it with oysters. "It's definitely one of my favorite products," he said. The Wine Spectator

8 Brix is a sweet fruity grape juice brimming with crisp acidity.  It's a wine-friendly alternative to vinegar, citrus or acidic components.  A few drops can subtly adjust acidity and enhance flavours in sweet and savoury foods and cocktails.
Uses: A complex sweet and sour condiment, added in just a small amount to cocktails, sauces, soups, stews, marinades, meats, seafood and vegetables finishes your dish.
Availability: 8 Brix is available for purchase now. 8 Brix is made once a year if growing and weather conditions permit.
Different: 8 Brix Verjus is made with juice from naturally frozen grapes (very sweet) and with juice from unripe grapes (very sour), as well as ripe grapes. 8 Brix is sweet and sour. Traditional verjus is sour.
All Natural: 8 Brix Verjus is made from Minus 8 Vineyard's Premium wine grapes, with no preservatives or coloring.
